We were fortunate to buy a new house, and were able to pick things like the cabinets, mantel, and even the color of the railings. Even though the house was new, there was a lot of customizing we wanted to do on our own once the house was finished.
We tried to stop by our house as much as possible during the building process (they loved that). It was a great way to learn what goes into building a house. Because Bryan wanted to buy the biggest TV possible, we asked the builder to add extra support ("engineering") behind the wall over the fireplace, where we knew we'd be hanging our television.
